Synthesis of α-Glycosyl-Stevia Sugar Catalyzed by Glycosyltransferase(Ⅱ)

Abstract: Anion cellulosic beads were used as support for immobilization of glycosyltransferase GT-1.The immobilized enzyme was used to catalyze the synthesis of α-glycosylstevia sugar.Various influencing factors were discussed.The result showed that when the reaction reached to a certain extent,transglycosylated amount changed very little with increase of amounts of enzyme and starch.The activity of immobilized GT-1 lost very little after repeated uses for 8 times.
