枸杞子中红色素的提取及稳定性

摘要/Abstract

摘要： 枸杞子为茄科构祀属植物的果实,具有补肾养肝,润肺明目以及调节机体免疫力,抑制肿瘤生长和细胞突变,延缓衰老及伉脂肪肝等功效.但有关从构祀子中提取天然色素的研究却鲜为报道.

Abstract: Three different methods for extracting red pigment from lycium barbarum were compared and the stability of this red pigment was studied. The experimental results showed that the flooding extraction is superior to other two methods. The red pigment is resistant to heat, acid and base, and keeps stable in the presence of Cu²⁺ and Ca²⁺ ions.So this technique is expected to be used extensively.
